Luego se a\u00f1ade cuajo. Se deja en reposo, coagula, lira y se extrae la cuajada.<\/p>\n\n\n\n<p>Se moldea, se prensa y se colocan los quesos en salmuera durante 24 horas. Su forma es cil\u00edndrica, o en barras alargadas para facilitar su corte en lonchas y su color es amarillo p\u00e1lido.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Queso de Taf\u00ed<\/strong><\/h3>\n\n\n\n<p>&nbsp;El queso Taf\u00ed es uno de los quesos m\u00e1s antiguos elaborados en la provincia de Tucum\u00e1n, formando parte de los quesos caseros de la gastronom\u00eda tradicional.<\/p>\n\n\n\n<p>Su nombre deriva de la palabra diaguita \u201ctaktikllakta\u201d que significa \u201cpueblo de entrada espl\u00e9ndida\u201d, y el origen es de Taf\u00ed el Valle, en el sitio ubicado en el Valle del Taf\u00ed.<\/p>\n\n\n\n<p>Este producto comenz\u00f3 a fabricarse en el siglo XVIII a partir de la llegada de los jesuitas, quienes ense\u00f1aban ganader\u00eda ovina, caprina y vacuna e industria l\u00e1ctea a los ind\u00edgenas del lugar; haciendo ello que este queso sea declarado patrimonio gastron\u00f3mico nacional.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"816\" height=\"500\" src=\"https:\/\/i0.wp.com\/elregionalvm.com.ar\/noticias-villa-maria\/wp-content\/uploads\/2023\/08\/Queso-de-Tafi-2.jpeg?resize=816%2C500&#038;ssl=1\" alt=\"\" class=\"wp-image-81659\" srcset=\"https:\/\/i0.wp.com\/elregionalvm.com.ar\/noticias-villa-maria\/wp-content\/uploads\/2023\/08\/Queso-de-Tafi-2.jpeg?w=816&amp;ssl=1 816w, https:\/\/i0.wp.com\/elregionalvm.com.ar\/noticias-villa-maria\/wp-content\/uploads\/2023\/08\/Queso-de-Tafi-2.jpeg?resize=300%2C184&amp;ssl=1 300w, https:\/\/i0.wp.com\/elregionalvm.com.ar\/noticias-villa-maria\/wp-content\/uploads\/2023\/08\/Queso-de-Tafi-2.jpeg?resize=768%2C471&amp;ssl=1 768w\" sizes=\"(max-width: 816px) 100vw, 816px\" \/><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<p><strong>\u00bfC\u00f3mo se hace?<\/strong><\/p>\n\n\n\n<p>Es un queso de pasta semidura, elaborado de leche de vaca reci\u00e9n orde\u00f1ada. Se obtiene acidificaci\u00f3n de la leche por bacterias l\u00e1cticas y se coagula por acci\u00f3n del cuajo.<\/p>\n\n\n\n<p>Se elabora manualmente y luego se transporta a moldes de acero inoxidable, que antiguamente eran de paja. Son salados en salmuera y se envasan en moldes de 0,5 a 1,5 kilos.
