y Aplicadas<\/strong>&nbsp;de la UNVM vienen desarroll\u00e1ndose l\u00edneas de investigaci\u00f3n que buscan posibilitar mejoras para el sector agro productivo e industrial de la regi\u00f3n.<\/p>\n\n\n\n<p>En ese sentido, a partir de diversas fuentes de financiamiento, los grupos de trabajo se han ido consolidando con la incorporaci\u00f3n de personal sumamente calificado y de equipamiento que permiten ofrecer diversos servicios a terceros.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" fetchpriority=\"high\" decoding=\"async\" 768px\" \/><\/figure>\n\n\n\n<p>Tal es as\u00ed que en esta oportunidad desde el<strong>&nbsp;Instituto Multidisciplinario de Investigaci\u00f3n y Transferencia Agroalimentaria y Biotecnol\u00f3gica<\/strong>&nbsp;(IMITAB) recientemente estuvieron llevando a cabo un an\u00e1lisis en las instalaciones de la planta l\u00e1ctea de \u2018Santa Clara\u2019 para determinar tiempos de residencia en intercambiadores de calor y tubos de retenci\u00f3n de sistemas continuos de pasteurizaci\u00f3n.<\/p>\n\n\n\n<p>Seg\u00fan comentaron desde el grupo de\u00a0<strong>An\u00e1lisis y Simulaci\u00f3n del Procesamiento de Alimentos<\/strong>\u00a0(ASIPAL), la t\u00e9cnica utilizada fue la de est\u00edmulo-respuesta, permitiendo relevar la distribuci\u00f3n de los tiempos de resistencia y del tiempo m\u00ednimo de retenci\u00f3n.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"768\" height=\"1024\" de sistemas\u00bb, coment\u00f3 al respecto el director e investigador que forma parte del organismo de doble dependencia entre el Conicet y la UNVM,&nbsp;<strong>Alejandro Lespinard.<\/strong><\/p>\n\n\n\n<p>Adem\u00e1s, desde el equipo informaron que tambi\u00e9n llevaron a cabo la validaci\u00f3n del proceso de pasteurizaci\u00f3n de grasa anhidra deshidratada (AMF), con el objetivo de mejorar tratamientos t\u00e9rmicos.<\/p>\n\n\n\n<p>Seg\u00fan destacaron, estas instancias son posibles gracias a que disponen de equipamiento de \u00faltima generaci\u00f3n como lo es, por ejemplo, una c\u00e1mara termogr\u00e1fica que permite el an\u00e1lisis de procesos de pasteurizaci\u00f3n, esterilizaci\u00f3n, secado, cocci\u00f3n y refrigeraci\u00f3n entre otros.<\/p>\n\n\n\n<p>\u00abSe trata de par\u00e1metros fundamentales que permiten asegurar la inocuidad microbiol\u00f3gica de los productos que son tratados t\u00e9rmicamente en este tipo de
